 Add some spice to the usual cucumber salad, with an Asian twist.  Rice vinegar and sesame oil make this summer salad shine!


1 English Cucumber
1 tsp. Kosher salt
1 Tbsp. rice vinegar
2 tsp. sugar
2 tsp. soy sauce
1/2 tsp. sesame oil
2 scallions, sliced
1 garlic clove, minced
pinch of red pepper flakes
chopped cilantro leaves


  1. Chop cucumber
  2. Sprinkle with kosher salt; let sit 10 minutes.
  3. Whisk rice vinegar, sugar and soy sauce, sesame oil, scallions, garlic and a pinch of red pepper flakes in a large bowl.
  4. Drain the cucumber and toss with the dressing; season with salt.
  5. Top with chopped cilantro.
