Recipe: Carrot, Zucchini and Squash Ribbons

Try this veggie-packed side dish at your next cook-out or family gathering. It’s a great way to use up the vegetables in your garden to make a colorful and tasty medley.
Ingredients
2 large carrots, peeled
3 large zucchini, peeled
3 large yellow squash, peeled
2 Tbsp. butter
2 cloves garlic, minced
2 Tbsp. minced fresh parsley leaves
1/2 tsp. salt
1/4 tsp ground black pepper
1/2 lime, juiced
Directions:
  1. Cut carrots, zucchini, and squash into thin ribbons (use a mandolin or vegetable peeler).
  2. In a large skillet, melt butter over medium-high heat.
  3. Add garlic and cook for 2 minutes.
  4. Add carrot ribbons.
  5. Toss in zucchini and squash ribbons, salt, pepper, parsley and lime juice.
  6. Cook for 6 to 10 minutes
