Recipe: Chile-Garlic Edamame

Edamame are immature soy beans, still in the pod.  They make a delicious and nutritious side dish. However, note that the pod should not be eaten.

Ingredients:
1 pound frozen edamame, in the pods
salt
1 Tbsp. olive oil
1/4 tsp. red pepper flakes
2 garlic cloves, thinly sliced
lime juice

Directions:

  1. Cook the edamame in the pods in salted boiling water until tender, 5 minutes; drain.
  2. Heat olive oil, red pepper flakes and sliced garlic cloves in a skillet over medium heat, 1 to 2 minutes.
  3. Stir in the edamame, some lime juice and salt.

  • adjust the amounts of garlic and red pepper flakes to your own taste – this recipe is quite spicy as is.
