Here’s a shout out to my co-worker and friend, Patti, who kindly brought me some cucumbers from her home garden – thanks, Patti! I found this interesting recipe for Cucumber Lemonade and thought I would use her garden bounty to give it a try! I know, it sounds a little odd – cucumbers in lemonade? Well, I liked it – definitely a different taste, but surprisingly refreshing!
1 cucumber, thinly sliced
1 (12 oz.) can frozen lemonade concentrate
1 (2 liter) bottle lemon-lime flavored carbonated beverage
- Place the cucumber slices into a large pitcher.
- Pour the lemonade concentrate over the cucumber and let stand for 10 minutes.
- Pour in the lemon-lime soda and pour into glasses to serve.
