Recipe: Pan-Seared Sliced Pork Tenderloin with Potatoes and Lemon

This one-skillet pork supper is super fast and easy, perfect for a weeknight meal.
The lemon and cilantro add a pop of brightness to the pork.
Ingredients:
2 Tbsp. olive oil
1 lb. red potatoes, cut into 1/2-inch cubes
Coarse salt and ground pepper
3 scallions, thinly sliced
1 pork tenderloin (about 1 pound)
1 lemon, thinly sliced
1/4 cup fresh cilantro leaves
Directions:

  1. In a large skillet, heat 1 Tbsp. oil over medium-high heat.
  2. Add potatoes; season with salt and pepper.
  3. Cook, tossing occasionally, until golden brown, 8 to 10 minutes.
  4. Add 1/2 cup water; cover, and cook until potatoes are tender and liquid has evaporated, about 5 minutes.
  5. Add scallions; cook 1 minute.
  6. Transfer mixture to a bowl, and keep warm (reserve skillet).
  7. Using a sharp knife, cut tenderloin crosswise into 12 equal slices.
  8. Press pork slices between your hands to flatten evenly.
  9. In skillet, heat 1 Tbsp. oil over medium-high.
  10. Working in two batches, cook pork until browned, 1 to 2 minutes per side, adding lemon slices in the last 2 minutes of cooking.
  11. Serve pork with lemons and potatoes, topped with cilantro.

Food Mingle Blog Alternatives and Substitutions:

  • My local grocery store, sells marinated pork tenderloin. For this recipe, I used a pork tenderloin marinated in lemon and garlic – it was a nice pairing with the lemon in this recipe.

Yield: 4 servings of three slices of pork each
