Recipe: Green Goddess Salad Dressing (with Avocado and Buttermilk)

This classic buttermilk-based recipe is a great way to dress up a lettuce, tomatoes or crudite platter.  By using low-fat buttermilk, the calorie content is not as high as the higher fat version, yet the taste is just as great. You can also use this for topping sandwiches and burgers. Just saying the really cool name of this recipe makes me smile…and isn’t that what it’s all about?
Ingredients:
1/2 ripe avocado, peeled
3/4 cup low-fat buttermilk
3 Tbsp. white wine vinegar
2 Tbsp. coarsely chopped fresh tarragon leaves
1 scallion (white and green parts), coarsely chopped
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
Directions:
  1. Put all the ingredients into a blender and blend until smooth.
  2. Any leftover dressing will keep well in the refrigerator for 2 to 3 days in an airtight container

Food Mingle Blog Alternatives and Substitutions:

  • I had a small avocado, so I used the entire thing.
  • I enjoyed this dressing, but next time, I would use just a bit less salt.
 Yield: 8 servings, about 1 cup, serving size: 2 tablespoons
