Recipe: Edamame Parmesan

If you’ve never tried edamame (green soy beans), here’s your chance to check it out!
Ingredients:
One 12-ounce package frozen shelled edamame, thawed
2 Tbsp. olive oil
1/4 cup grated Parmesan
1/4 tsp. garlic powder
Kosher salt and freshly ground black pepper
Directions:
  1. Preheat the oven to 400 degrees F.
  2. Toss the edamame with the olive oil to coat in a medium bowl.
  3. In a separate small bowl, mix the Parmesan and garlic powder with some salt and pepper.
  4. Add the Parmesan mixture to the edamame mixture and toss.
  5. Spread the edamame on a rimmed baking sheet and bake, turning once halfway through, until the cheese just starts to brown, 10 to15 minutes.
  6. Serve immediately or store in an airtight container.

Food Mingle Blog Alternatives and Substitutions:

  • After reading the reviews on line for this recipe, I decided to blot the edamame with a paper towel to dry them off a bit before cooking. I think this helped contribute to the crispy outcome.

Yield: 1/1/2 cups
