Once you make your own homemade tartar sauce, you’ll never bother with store-bought again. This recipe uses cornichons, which are made with mini-gherkin cucumbers. Adjust the amount of capers and hot sauce to your liking for a customized recipe.
1 cup mayonnaise
3 Tbsp. chopped capers
10 Tbsp. chopped cornichons (small whole pickles)
2 Tbsp. finely chopped flat-leaf parsley
1/2 lemon, juiced
Dash hot sauce
1 Tbsp. extra-virgin olive
- In a small mixing bowl, combine all ingredients.
- Chill before serving to let the flavors marry.

- Cornichons are made with mini gherkin cucumbers, one to two inches in length and harvested before reaching full maturity for an extra-tart bite. You can find them in the grocery store aisle with the other pickles. As an alternative, you can use dill relish, but just know that it has other ingredients in it.
