Happy National Curried Chicken Day! I know, I know – you almost missed it, right?
Each year on January 12th, curried chicken lovers in the USA unite to pay homage to this spicy poultry dish. Chicken curry is often made with chicken stewed in a tomato-based sauce, flavored with a variety of ginger, garlic, and chilies, along with sassy spices such as turmeric, cumin, coriander, cinnamon, and cardamom. Although this dish is a common delicacy in South Asia, Southeast Asia and the Caribbean, it is also popular in the West. In fact, in parts of the USA, this popular dish is often referred to as Country Captain Chicken.
Here is a recipe for Thai Panang Chicken Curry, to help you celebrate this wonderful day!
I learned how to make this recipe at a fundraiser called ‘New York State of Mind’, at the New York Wine & Culinary Center. It features locally sourced ingredients!
