National Carrot Cake Day – February 3rd


Happy National Carrot Cake day!

Carrot cake resembles a quick bread, in that all the mixed wet ingredients are added to all the mixed dry ingredients. Shaved carrots are mixed in the batter to provide a soft, yet dense texture. In addition, carrot cake is often either glazed or topped with white icing or cream cheese frosting.

To help you celebrate this special day, here is my recipe for Carrot Cake Muffins with Streusel Tipping – enjoy!

    Carrot cake is awesome! Its my hubbie fav cake and I make this often, but I’ve never made it in muffin form. Its always good to see others recipes. I noted that you use nutmeg and cloves, which I’ve never used in Carrot cake but its good to know what else works well.

      Hi Kelly – I was skeptical at first about the cloves because they are so strong. However, this was how the recipe was given to us in my culinary class – it came out great, but you can always adjust the amount of cloves (and nutmeg) if desired. Thanks so much for your comment.
