Recipe: Pizza Crackers with Cheese and Broccoli

Looking for a fun appetizer to serve at your next get together? Try these pizza crackers, with a variety of toppings and sauces.  They are also great as an after school snack.

Ingredients
8 square whole-wheat crackers
3 Tbsp. jarred marinara sauce (or make your own marinara sauce)
3 Tbsp. shredded part-skim mozzarella cheese
1 Tbsp. thawed frozen chopped broccoli

 

 

 

Directions

  1. Heat broiler.
  2. Place 8 square whole-wheat crackers on a baking sheet.
  3. Dividing evenly, top crackers with 3 tablespoons jarred marinara sauce and 3 tablespoons shredded part-skim mozzarella cheese.

  4. Top half of the crackers with 1 tablespoon thawed frozen chopped broccoli.

  5. Broil until cheese has melted, 2 to 3 minutes

Food Mingle Blog Alternatives and Substitutions

  • Instead of crackers, you might also use English muffins or portobello mushroom caps.
  • Use your favorite pizza toppings for a custom appetizer.
  • I made these in my toaster oven!
