Happy National Pumpkin Day!
Don’t neglect the pumpkin – it is a versatile and inexpensive squash. In fact, most parts of the pumpkin are edible, including the shell, seeds, leaves, and flowers. Also, immature pumpkins that are still small and green may be eaten in the same way as squash or zucchini.
