Not only is it New Year’s Eve around the world, but today is also National Champagne Day in the Unites States – how fitting as champagne is often the beverage of choice to ring in the new year.

Recipe: Apple Cider Float

Add vanilla ice cream to your apple cider and create a fun and tasty cider float.

Ingredients:
2/3 cup apple cider
vanilla ice cream
apple pie spice

Directions:

  1. Fill a small glass 2/3 full with apple cider.
  2. Add a scoop of vanilla ice cream.
  3. Sprinkle with apple pie spice.

Recipe: Pumpkin-Spiced Hot Cider

This isn’t your average hot cider.  The zest of one orange and some brown sugar and pumpkin spice amp up the flavor. The adult version also includes rum.

Ingredients:
1 gallon apple cider
1 orange, zested and juiced
1 Tbsp. brown sugar
2 tsp. pumpkin pie spice
24 ounces spiced rum, if desired

Directions:

  1. Heat the cider in a large pot over medium heat until it starts to simmer.
  2. Add 3 strips of orange zest, the orange juice, brown sugar, and pumpkin pie spice and stir.
  3. Bring to a simmer then turn the heat down to low to keep it hot, but not simmering.
  4. Heat for 5 minutes to allow all the flavors to meld together before serving.
  5. Serve hot in heatproof mugs with a shot of spiced rum, if desired.

Recipe: Pumpkin-Ginger Smoothie

Get in the Fall season with this pumpkin-themed smoothie.
Ingredients:

1/2 cup pure pumpkin purée
1/2 cup low fat plain yogurt
3/4 cup ice cubes
2 Tbsp. pure maple syrup
1 Tbsp. apple cider vinegar
1/2″ piece fresh ginger, peeled and grated
Pinch ground cinnamon, plus more for garnish
water (optional)

Directions:

  1. Place the pumpkin purée, yogurt, ice cubes, maple syrup, vinegar, ginger and cinnamon into a blender.
  2. Blend until very smooth.
  3. Add 1 to 2 tablespoons of water if needed to adjust consistency.
  4. Pour into a glass and dust with cinnamon.

  • I substituted plain Greek yogurt for the plain yogurt, to add thickness to the consistency.
